Singing Rooster’s Haitian Honey is a hit with roasters! This is our FIRST honey processed coffee where we leave on some of the pulp and then carefully dry it. Not only does this save water for a country who badly needs it, but also honey processed coffees offer sweeter profiles and fuller bodies.

Roasting Profile: Our honied processed coffee offers a sweet profile and fuller body. A brighter and wilder cup for sure. Lemongrass and floral upfront with some very nice red fruit notes, on the sweeter side and balanced with a bakers chocolate like earthiness (a good contrast) found in the other Haitian coffees. Don’t try to roast honey coffees like a wet processed lot. Instead, roast slowly and on the lighter side – when you do, this coffee reveals sweet milk chocolate, dry grapefruit & raisins. Lighter roasts will let the exotic profile shine but be pretty punchy with a slight risk of grassy tones if you get a couple beans too close to first crack.
