Colin plays center stage in the Rooster’s Cuckoo-roo and comes from Haiti’s coffee mecca:  Thiotte.

This coffee won Haiti’s 2015 Cup of Excellence with good reason:  when roasted to 2nd crack in the cooling bin – this coffee reveals a chocolate-cherry flavor that packs a punch on it’s own or as a base for a velour espresso.

Roasting Profile: when roasted to a Full City, these flavors can be revealed:  black currant , orange peel and dry raisin.
